WUC Listener Holiday Tips



Here are some tips from Wake Up Call listeners that can help make your 4th of July holiday an awesome one.

Red, White, and Blue Salad

This is a fun and easy recipe that serves about 15.

Ingredients:

* 1 package (3 ounces) berry blue gelatin
* 2 cups boiling water, divided
* 2-1/2 cups cold water, divided
* 1 cup fresh blueberries
* 1 envelope unflavored gelatin
* 1 cup heavy whipping cream
* 6 tablespoons sugar
* 2 cups (16 ounces) sour cream
* 1 teaspoon vanilla extract
* 1 package (3 ounces) raspberry gelatin
* 1 cup fresh raspberries
* Whipped topping and additional berries, optional

Directions:

In a large bowl, dissolve berry blue gelatin in 1 cup boiling water; stir in 1 cup cold water. Add blueberries. Pour into a 3-qt. serving bowl. Refrigerate until firm, about 1 hour.

Meanwhile, in a saucepan, sprinkle unflavored gelatin over 1/2 cup cold water; let stand for 1 minute. Add the cream and sugar; cook and stir over low heat until gelatin and sugar are completely dissolved. cool to room temperature.

Whisk in sour cream and vanilla. Spoon over the blue layer. Refrigerate until firm.

In a large bowl, dissolve raspberry gelatin in remaining hot water; stir in remaining cold water. Add raspberries. Spoon over cream layer. Chill until set. Garnish with whipped topping and additional berries if desired.


Slaw

This is a recipe that is great for BBQs and serves about 12 people.

Ingredients:

* 1 cup light sour cream
* 1/2 cup mayonnaise
* 1/4 cup white wine vinegar
* 2 tablespoons sugar
* 1 tablespoon celery seed
* 1 teaspoon salt
* 1/4 teaspoon cayenne pepper
* 5 cups shredded green cabbage, about 1 1/2 pounds
* 4 cups shredded red cabbage, about 1 pound
* 4 medium stalks celery, thinly sliced diagonally
* 2 medium carrots, coarsely grated

Preparation:

In large bowl, combine first 7 ingredients; mix well. Add remaining ingredients; toss until well coated.


Raley’s & Bel-Air Pre-Made Burgers

They carry really good pre-made burgers, that are great for BBQs, and are really easy to make. They have a bunch of different kinds to add a little diversity to your holiday party.


Cucumber Salad

This is a refreshing little dish that would be perfect for a mid-summer, holiday celebration.

Ingredients

*3 medium cucumbers, thinly sliced
*1 medium sweet onion, sliced thin and separated into rings
*1 cup white vinegar
*1/4 cup vegetable oil
*1 cup water
*1/4 cup sugar, or more to taste (or diet sweetener)

Directions

The cucumbers may be scored or part of the skin can be peeled for better absorption of the juice.

Layer cucumbers with the onion in a large bowl. In a separate bowl, mix remaining ingredients, stirring until sugar has dissolved.

Taste and adjust sugar for sweetness, adding more sugar, if needed. Pour over vegetables and toss lightly.

Cover and chill for 2-4 hours before serving.
